DID YOU KNOW? (Arsenic + Heavy Metals Edition )
1. Did you know arsenic isn’t man‑made?
It’s a naturally occurring element in soil and rock. It’s been here longer than farming, longer than people, longer than labels. (And no, “organic” doesn’t remove it.)
2. Did you know heavy metals don’t break down?
Pesticides degrade. Chemicals evaporate. But arsenic, lead, and cadmium stay in the soil for decades — sometimes centuries. The land remembers everything.
3. Did you know “organic” rules don’t cover historical contamination?
The USDA regulates what farmers do today, not what happened on that land 40 years ago. Old orchards, old farms, old treatments… they all leave fingerprints.
4. Did you know rice absorbs arsenic more than almost any crop?
It’s a natural accumulator. It pulls arsenic out of the soil and water like a sponge — even when grown organically.
5. Did you know baby food has some of the strictest arsenic limits… and still struggles to meet them?
Not because companies are evil — but because the soil itself is the problem.
6. Did you know the U.S. banned arsenic pesticides… but only recently?
For decades they were used on orchards, cotton, and vineyards. The bottles are gone. The residue isn’t.
7. Did you know groundwater can carry arsenic naturally?
No spill. No factory. Just geology. Some wells test clean; some don’t. It depends on the rock beneath your feet.
8. Did you know the dose matters more than the word “organic”?
A tiny amount in soil is normal. A lot is dangerous. Labels don’t tell you the difference.
I learned all of this the hard way — including the day someone tried to hand me a bottle of arsenic like it was nothing. That story’s in my upcoming book on food myths. -Despina Manos
